[In elementary school, I used to feed my pizza burgers to Greg Standafer. I wonder if he’s still a fan? We called him “Gargoyle,” which was a nickname his brothers had given him, I believe. Why do I remember things like that and not the names of my own children?]

Chicken Gravy on Mashed Potatoes – Be. Still. My. Heart.

So you can imagine how thrilled I was to find the easiest recipe EVER for Chicken Gravy and Mashed Potatoes!

This is it, people! I fill the bottom of my Crockpot with FROZEN chicken breasts. (I’m feeding 5 and I have 2 teen boys, so I put about 9 5-oz breasts. Smaller family = less chicken. Guess. This is not rocket science.)

I dumped about 1/2 of that big ol’ can of chicken broth in the Crockpot. Then I sprinkled in 2 packages of generic Chicken Gravy Mix packets.

Set the Crockpot on LOW and leave it for 8-9 hours. Just before you eat, shred the chicken. Scoop it on top of mashed potatoes (or rice).

Don’t even get me started on the mashed potatoes. I asked for a pressure cooker for Christmas from my parents. This isn’t your grandma’s scary pressure cookers. This baby is A.M.A.Z.I.N.G!! Next to my Crockpot, it might become my second favorite kitchen appliance. I’ll do a post on my PRECIOUS pressure cooker later, but suffice it to say, I can go from raw scrubbed potatoes to cooked, fluffy, ready-to-mash potatoes in 10 minutes. I kid you not.

I wish I had a picture to show you of the finished product, but my boys dug in and demolished it all before I could snap a photo.

Some foods just tasted better in the cafeteria of Central Elementary School than anywhere else. Seriously, if we cleaned our plates we could line up for an extra slice of buttered white bread. (Packaged! Not homemade!) [Why do I remember THAT?!] DELISH!

Chicken Gravy and Mashed Potatoes was a favorite back in the day … according to my children, before color TVs were the rage (what.ever.)
