Do you see a theme with my Crockpot Tuesdays? One: It has to be super simple, or it’s not happening! Two: Frozen chicken breasts are often my base.
I’m telling you, it doesn’t get easier than this!
Ingredients:
Frozen Chicken Breasts … I used about 9
1 can Black Beans
1 can Ranch Style Beans
1 package of Taco Mix
Large jar of salsa – only use about 2/3 of it
Directions: Pile it all into the Crockpot in the order listed above
Turn your Crockpot on LOW and leave it for 6-9 hours.
Just before you’re ready to eat, shred the chicken.
Serve this on top of a bowl of rice. Add whatever toppings your family likes. This time we had slim pickins’: Shredded cheddar cheese, sour cream, and salsa. You can add just about anything you want to your Chicken Taco Bowl: Black olives, jalapenos, lettuce, tortilla chips.
When life is complicated, keep it simple in the kitchen. You can feed your family a warm, yummy, healthy meal with hardly any fuss and minimal stress.
