Today was a cold, dreary, rainy day. The forecast is for more of the same all week. We were needing some serious comfort food and this was just the ticket!

Ingredients:

7 frozen chicken breasts (note to self … make 9 next time)

1 can Cream of Chicken soup

1 can Progresso Light Chicken and Dumplings

(This recipe originally called for 2 cream of chicken soups and 1 cup of chicken broth. I had this can of Progresso Chicken and Dumplings and opted to use this instead. It worked beautifully!)

1/4 teaspoon Cayenne pepper

1/2 teaspoon Basil flakes

Onion flakes … only because I ran out of the real thing. Next time I’ll use a small onion.

I let this all cook in the Crockpot on low all day. Then 30 minutes before we wanted to eat, I turned the Crockpot up to high after doing the following …

Shred the chicken

Add 2 pounds of frozen (uncooked) mixed vegetables

Cube and add 4 ounces of cream cheese

Quarter the uncooked biscuits from two 7.5 ounce tubes of refrigerator biscuits and stir into Crockpot

Salt and Pepper to taste

This was simply excellent. We had some homemade whole wheat bread that we served with our chicken and dumplings. This was a perfect comfort meal on a gray spring day.
